Ingredients

  • Bowl
  • 2 cups brown rice

  • 4 cups finely shredded red cabbage

  • 1 red pepper, diced

  • 1 cup shredded carrots

  • 1 cup drained chickpeas

  • 2 ripe avocados, cut into slices

  • 1/4 cup chopped cilantro

  • Lime wedges

  • 1/2 cup crumbled feta cheese

  • 1/2 cup almonds finely chopped

  • Citrus Cilantro Vinaigrette
  • 1 tsp finely grated orange and lime zest

  • 1/4 cup orange juice

  • 2 tbs lime juice

  • 2 tbs rice vinegar

  • 1 tbs honey

  • 12 tbs chopped cilantro

  • Pinch of kosher salt

  • 1/4 tsp black pepper

  • 1/2 cup olive oil

Directions

  • Prepare all ingredients and mix together
