1 red pepper, diced
1 cup shredded carrots
1 cup drained chickpeas
2 ripe avocados, cut into slices
1/4 cup chopped cilantro
Lime wedges
1/2 cup crumbled feta cheese
1/2 cup almonds finely chopped
- Citrus Cilantro Vinaigrette
1 tsp finely grated orange and lime zest
1/4 cup orange juice
2 tbs lime juice
2 tbs rice vinegar
1 tbs honey
12 tbs chopped cilantro
Pinch of kosher salt
1/4 tsp black pepper
1/2 cup olive oil
