Ingredients

  • 1 lb extra-lean ground beef

  • 1 medium onion, chopped

  • 1 medium green bell pepper, chopped

  • 1 jalapeno, seeded and chopped

  • 1 tbs chili powder

  • 1 tbs cumin

  • 2 tbs minced garlic

  • 1/2 tsp ground coriander

  • 1/15.5 oz can no salt added pinto or kidney beans drained and rinsed

  • 1-14.5 oz can no salt added diced tomatoes

  • 3/4 cup low-sodium salsa

  • 1/2 medium avocado, sliced

  • 1/2 cup green onions

  • 1/2 cup low-fat cheddar cheese

  • 1/4 cup low-fat sour cream or Greek yogurt

  • 1/4 cup chopped fresh cilantro

Directions

  • Spray skillet w/nonstick spray and cook beef and onion over medium heat, stirring for 5-7 minutes
  • Stir in bell pepper, jalapeno, chili powder, cumin, garlic and coriander. Cook for 5 minutes frequently stirring
  • Stir in remaining chili ingredients. Reduce heat, cover and simmer for 20 minutes
